Mother, Mom, Ma, Mama!

I’m a Mom or Mama gal. That’s what my girls call me and even though I may hear it a bazillion times in the course of a week, it always makes me happy (maybe at 3am not so much, but still). Sometimes I joke to my husband that I should carry a clicker like some kind of bouncer and just see ACTUALLY how many times a day I hear those words. Could be simultaneously entertaining and horrifying.

Whatever you call your Mom, Sunday is the day to call her something sweeeeeet. Treat her with a little extra blast of love and adoration. Remember all those places she drove you when you were a kid? Remember all the lunches she packed? Remember all the bowls of chicken soup she made when you were feeling under the weather? Yes. You. Do. Now it’s your turn. Cook up some of the recipes I offered early in the week (and today). Get some flowers and show the love. And with these quotes, share a few laughs together.

Spring Frittata, courtesy of my dear friend Alena

3 medium new pototoes
2 tsp. olive oil
1 small red onion, cut into wedges
pinch of chopped garlic
8-10 slivered basil leaves
6 eggs, lightly beaten
4 oz. goat cheese, broken into little chunks

Preheat oven to 375. Boil potatoes with a pinch of salt until tender (18-20 minutes). Drain and cool, cut into 1-inch cubes.

In a 10″ ovenproof pan over medium heat warm olive oil. Add onion. Saute until tender (about 5 minutes). Add potatoes, garlic and basil. Saute a couple of minutes more. Add eggs, salt and pepper (to taste) and goat cheese. Stir until just mixed lightly.

Bake in oven until frittata is set, about 20 minutes. Fritatta-licious!

And now for the Key Lime Bars, courtesy of Martha Stewart. These will have you swooning.

For the crust:
1 cup plus 2.5 Tb. finely ground graham cracker crumbs
1/3 cup sugar
5 Tb. unsalted butter, melted

For the filling:
3 large egg yolks
1.5 tsp. finely grated lime zest
1 (14 oz.) can sweetened condensed milk
2/3 cups fresh lime juice (either Key or regular limes will work. Honestly, Key limes are a pain. Just use the regular ones)

Preheat oven to 350. Make crust. Stir together graham cracker crumbs, sugar and butter in small bowl. Press evenly onto bottom of 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Cool completely on wire rack.

Make filling: Mix egg yolks and lime zest together in large bowl with mixer.  Mix until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Then, mix on high until thick, about 3 minutes. Reduce speed to low. Add lime juice and mix until just combined.

Spread filling over cooled crust. Bake, rotating halfway through, until filling is set, about 10 minutes. Let cool completely on wire rack. Refrigerate at least 4 hours or overnight. Get read to fall in love.

Just Add Mom

Mom’s Day is this weekend. Do. Not. Forget.

See, my husband can’t for the sheer reason that also this week is my birthday (remember I told you I was born on Mother’s Day…all those years ago. Ha.) so that translates to HIS crazy week of the year. Weeee! Actually, this year he’s off the hook. I told him I didn’t want a thing. We just went to Arizona and I’m kind of viewing that as my present. With the exception of a bigger kitchen and smaller thighs (both rather hard to put big red bows on), there really isn’t anything I absolutely want. Yes, I will never turn away a diamond or anything sparkly, let that be known here and now. But for this year… flowers, card. That’s all. Give me a good kiss. I’ll be a happy woman. In other words, I’m content.

Whether it’s big stuff or small stuff, some mode of recognition is always a good thing on Mother’s Day. So, for the next few days (peppered with other commentary, of course), I’m going to share some good brunch recipes for you. Hopefully the weather will be glorious, blooms will be blooming and you can shower upon your Mom (or Mom-in-law or Mom-figure) good eats and good love.

So…for starters…..Starters. I served this first appetizer at Easter and it was a hit. Simple, elegant and pop-in-your-mouth tasty. Also, you get to cruise down that DATE aisle in the food store again.

Couldn’t be simpler….Walnut and Parmigiano-Reggiano Stuffed Dates . That’s all it is. How the heck easy is that? Crunchy, creamy, sweet. Yum.

-Buy your pitted dates (not the giant Medjool ones, just the Sunsweet ones in the carton), cut slice along top, lengthwise. Make a nice little pocket.

-Buy some walnuts, toast them quickly in the oven (350 degrees…in a single layer on a baking sheet…just for about 6 minutes or so), let them cool. Watch them in the oven…they burn quickly and no one wants a burnt walnut. Blech.

-Cut nice slivers of good Parmigiano-Reggiano

-Stuff walnut piece and cheese into date pocket. Arrange gorgeously on plate and serve with a smile. Wanna date, baby?

And….every good party starts with a good drink. This one is a divine pink color and goes down VERY easy. This recipe makes a lot, so either get drinking, invite a crowd or just tailor the amounts to your crowd.

Cranberry Punch

One 750 ml bottle Cranberry vodka, chilled
1/2 cup cranberry-flavored mixer, such as Rose’s Cocktail Infusions Cranberry Twist Mix
6 cups cran-raspberry juice
3 cups orange juice
juice of 1 lemon
1 orange, thinly sliced
8 oz. fresh raspberries
1 bottle Prosecco, chilled

In a punch bowl, combine the vodka, mixer, cran-raspberry juice, orange juice and lemon juice. Float orange slices on top. To serve, place a few raspberries in a champagne flute, fill the glass halfway with punch and top with Prosecco.

Bubbly, pink and fun. That’s the ticket. Here, Mom!

Pinkies up!

Does your mama like tea? This mama does. I’ve always been a tea drinker (henceforth causing my suitcase to weigh just a tad too much when I returned home from a trip to London a few years ago. Insert husband-eye-roll here). I love antique tea jars (although I don’t own any. Someday I’ll find some). I love the way tea smells, brewed or just dry. The slightly bitter thing appeals to me for some reason. I like it iced, I like it hot. Caffeinated or without. Green, black, white, you name it. And the more I’ve been reading about the stuff, the more we all should be drinking more of it. It’s good for you…lots of antioxidants, especially in the green teas. Do you know why they are green? Simple answer: the leaves haven’t been dried in the sun as long, therefore retaining more of it’s good nutrients and antioxidants. White is even more delicately dried than green, making it the grand-poo-ba of tea health. The trick, though, is finding GOOD teas. If you have not wandered beyond the supermarket aisle, then you haven’t lived yet. Not to say there aren’t some tasty ones there…but great tea places are popping up all over, so why not branch out? You’ll find some lovely leaves on those branches. Ha.

Pictured above is one of my most favorite kitchen gadgets. No, not the mug. The other thing. It’s called IngenuiTEA by Adagio Teas. My mom-in-law, who also loves tea, gave me this a while back and I not only use it all the time, but I’ve given it as gifts now. It’s great because it’s a surefire and easy way to actually brew loose tea without getting tea-schrapnel at the bottom of your cup. Tea balls? Don’t work. Those holes are too big. The little frou-frou strainers that sit on top of cups? Eh, if you pour too fast, then the leaves overflow into your cup. IngenuiTEA WORKS. And, you can even put it in the dishwasher, my favorite appliance in the whole kitchen. My version of Dante’s Hell would be to spend eternity washing dishes and turning into a prune. While having to listen to album after album of the Carpenters. But that’s just me.

Back to the tea. So, Adagio. They have a website, aptly called www.adagio.com. Oodles of teas to choose from! Green to herbal and everything in between. Of course they also sell the IngenuiTEA brewers and gift packs, too. With this brewer, you put the loose tea in, fill it with boiling water, let it steep the appropriate amount of time, then put the brewer on top of your mug and it will then fill it. Yes, my kids like to say that it looks like it’s peeing into your cup. Whatever. Again, back to the tea. Adagio teas are a big hit in my book because they are (somehow) moderately priced, they have tons of types and the leaves are really good quality. Translation: not all dried teas look the same, as they most often do when they are squashed and crushed into little dunkable bags with tags. Some are honest-to-God big leaves. Some are twig-like (such as the Silver Needle white tea or the Kukicha green. Both delish). Some, like my favorite, Genmai Cha, actually has some popped rice in it. I kid you not. The first time I looked into the Genmai Cha bag, I didn’t know what the heck was in there with the tea. Turns out that the popped rice adds this fabulously nutty flavor to the tea. Adagio helps, too, because there certainly is a lot of tea out there to navigate. Their descriptions are spot on and also, the bags (of loose tea) aren’t too huge. You won’t be saddled with 20 extra servings of a tea that doesn’t excite your taste buds.
